Why You Need To Get Your Mushroom Mojo On Today

Mushrooms especially Reishi mushrooms are packed with antioxidants.  They may help many conditions including bronchitis, asthma and have a detoxifying effect.  As a health copywriter we think reishi mushrooms may be nourishing for our adrenals.  They contain high amounts of zinc, selenium and protein.  Mushrooms Salad is a delicious way to enjoy mushrooms.  Marinate them in olive oil, lemon juice, garlic and herbs.

Shiitake Mushrooms

Shiitake mushrooms have a high amino acid profile with an abundant amount of lysine and arginine.  They contain reasonable amounts of fibre, vitamins D, A, C, E, B's, calcium, potassium, zinc, and selenium.  Shiitake mushrooms may have many healing and immune boosting properties. A compound found in this mushroom, called lentinan, has been found to, maybe, a potent immune strengthener and ‘restorative’.  Lentinan enhances the immune system’s ability to combat infections and disease.  They may also contain high levels of a powerful antioxidant.  Antioxidants, as we know, may help protect the body against free radical damage and chronic disease.  Unlike most other antioxidants, they not destroyed when cooked. Shiitake mushrooms are usually sold dried, so they need to be soaked first for about 20 -30 minutes.

We love eating Shiitake mushrooms sprinkled on top of our soups, sauces, stir-fries, or vegetable dishes.  We love sautéed mushrooms with garlic and herbs for breakfast.

Oyster Mushrooms

Oyster mushrooms have a milder taste and softer texture than shiitake mushrooms.  Nutritionally they have a high plant protein content with an excellent amino acid profile.  Some say they may help lower cholesterol.  They contain vitamins B’s and C.  Minerals including sodium, potassium, phosphorous, manganese, magnesium, iron, copper, selenium and zinc.  I love adding them to an omelette, scrambled eggs, sautéed with garlic and herbs.  Added to stir-fry vegetables, ’scrambled tofu and casseroles.

Reishi Mushrooms

Reishi mushrooms are high in amino acids, vitamins B and C, magnesium, calcium, iron, copper, and zinc.  They may be cardiotonic and helpful for lowering serum cholesterol levels and lowering blood pressure.  They are nourishing whole foods for our immune system our adrenals.  Suitable for anxious people with adrenal weakness and poor sleep.
